An Eastern Shore Christmas Recipe provided by

Begin
with
8 cups cubed dried bread
My grandmother and mother got up early and pulled the bread into cubes etc.
I use Pepperidge Farms dry herb stuffing in a bag. Follow package instructions, then
continue with the following.
Add
2 chopped apples
3-4 chopped celery stalks
1/2 to 1 teaspoon thyme
a pinch of sage
couple of cranks of pepper from a peppermill
couple of good shakes of onion powder
2 handfuls of chopped walnuts
1 cup or more raisins (Plump them by putting in hot water for a few minutes prior to
draining and adding to the mixture.)
For a little more spice I've added a couple tablespoons fresh cilantro (spicy parsley) to
the mix.
I stir it with a chopstick to distribute the stuff.
Bake in buttered, covered casserole per package instructions.
